Healthy Around the Holidays

Thyme-roasted sweet potatoes from Epicurious!

During the holiday season, when the days are darker and the nights longer, we need all the comfort and cheer we can get. Spending time with family and friends is wonderful for our mental and emotional well-being. The foods and beverages that we reach for also play a major role in our sense of vitality and health at this time of year. It may be tempting at times to reach for items that are high in fat and sugar when the temperature drops, but these will leave you feeling even more tired and sluggish than before.

Luckily, at this time of year there is an abundance of seasonal produce available that provide us with a plethora of vitamins, minerals and good fats without comprising on taste and flavor. Adding these seasonal foods to your festive winter menu will help to keep you warm, full and happy!

Sweet potatoes are a holiday staple in the US, and are best eaten from November to December, when they are in season. They are native to Central and South America. In the US, sweet potatoes are mainly grown in the southern states, especially North Carolina. These delicious root vegetables are also super easy to prepare, and can simply be boiled, steamed or roasted in their skin. Sweet potatoes are one of nature’s best sources of vitamin A as Beta-Carotene. It is a good idea to consume them alongside some healthy fats, such as a drizzle of olive oil or some avocado, to aid beta -carotene absorption. Sweet potatoes are also chock-full of antioxidants, which help our bodies to fight free radicals and also protect our cells from oxidative stress. Phytonutrients in the brightly colored flesh of sweet potatoes also contain anti-inflammatory properties, helping to calm areas of inflammation in the body. The modern Western diet, high in acidic foods such as red meat and simple sugars, means that high bodily inflammation is a problem for, if not all, very many Americans. Sweet potatoes also contain many vitamins and minerals, including vitamins A and C, manganese, (an important component in energy production), copper, vitamins B1, B2 and B3, potassium and phosphorus.

In almost every café in Brooklyn this fall and winter, you can find the infamous pumpkin spice latte. Most commercial versions are loaded with sugar, cream and coffee, negating the health benefits of this super popular vegetable.  The same goes for the classic pumpkin pie, which in most cases is high in sugar and fat. However, it is possible to indulge in healthier versions of these classics, as vegan or even raw versions. Making sure to include plenty of real pumpkin in your pie this holiday season, without an excess of simple sugar means that you will reap some of its amazing health benefits.

High in fiber and low in fat, pumpkins make a great low-calorie option for those who want to feel full without adding extra fat.  Like sweet potatoes, the pumpkin’s orange hue means it is brimming with beta-carotene. Additionally, pumpkins also contain the antioxidants lutein and zeaxanthin, which help to protect eye health and integrity. Vitamin A is essential for optimal immune health and function, and also contributes to youthful skin appearance. The carotenoids in pumpkins also help to reduce inflammation and fight free radicals. Pumpkins are often paired with spices such as ginger and cinnamon- ginger can help to soothe an upset stomach and aid digestion, and some research has indicated that cinnamon may be helpful for blood sugar balancing.

Another popular product at this time of year is maple syrup. Many of us enjoy its sweet taste and in the US and Canada, it is a year-round staple, but especially around holiday season. We have all had it drizzled on top of a stack of pancakes, but did you know that maple syrup boasts some nutritional benefits that other sugars simply don’t? Maple syrup is made from the boiled-down sap of the maple tree and is native only to North America and Canada and was originally discovered and utilized by Native Americans.

Maple syrup is surprisingly rich in minerals, especially calcium, iron, zinc, potassium and selenium. It is also an excellent source of manganese, which is essential for healthy brain and nerve function. Unlike most sugars, maple syrup will not spike your blood sugaras  dramatically as white table sugar. Maple syrup is closer to its whole food form than some sugars, which means it retains more of its nutritive value. It is important to use all sugars sparingly, but it is always nice to know that your sugar of choice is providing you with some vitamins and minerals  as you indulge!

So there you have it- three seasonal and traditional holiday foods that are eaten in huge amounts every year in the US, and their health benefits. Remember that as you tuck in, you are doing your mind, body and soul some good by eating fresh, preferably organic whole foods in line with the seasons! Enjoy the holidays!

Follow Your Heart Vegan Gourmet

This product is one of the first commercially available vegan cheeses that we can recall – first there was Veganrella, and then there was Follow Your Heart many years later, and for a long time it was the only game in town. It is made by the makers of perennial vegan favorite, Vegenaise. It is available in mozzarella, monterey jack and cheddar flavors and has a base of soy protein.
Sliceable? Yes, it is sliceable, and it is easiest to slice just out of the fridge. It has a more gelatinous texture than any of the others and is suitable for grating as well.
Meltability? It melts fairly well, especially when put under a broiler.
Best uses: Pizza and lasagna. We don’t recommend this one for eating straight from the package.

The Organic Gourmet Soy Feta

This is the only feta substitute that we’ve seen. Formerly owned by Sunergia, it has been around for a long time and has a loyal following. It has an organic soymilk base and carries the USDA certified organic seal.
Sliceable? Yes, you can slice it but it is quite crumbly like real feta. It has a firm tofu-like texture.
Meltability? It is not meltable.
Best uses: Recipes that call for feta, pizza with roasted veggies.
Staff Comments: “Tastes like what you would expect feta to taste like, with good flavor. Not great by itself, but would be good in a dish.” “I like the texture.”

Dr. Cow

Made in Williamsburg, Brooklyn, this cashew-based cheese is fermented the same way dairy cheese is fermented, so it has the same savory, umami tang. It comes in both hard cheese and spreadable forms, and all have a simple base of cashews, probiotics and Himalayan sea salt. They make an array of flavors, including one with kale, one with algae, and a sun-dried tomato-turmeric variety.
Sliceable? The hard cheeses are very easy to slice, and their small size makes the slices perfect for crackers.
Meltability: These cheeses do not melt.
Best uses: Eat the hard cheeses right out of the package. They are ideal for cheese plates and pair perfectly with a slightly sweet cracker (like Back to Nature’s Crispy Wheats). They’re great with very sweet fruits, grapes in particular. The spreadable cheeses are perfect on bread, bagels or crackers. These are delectable cheeses to eat on their own, but they don’t taste as good when cooked, and they can easily overpower other ingredients.

Punk Rawk Labs

Made in Minneapolis and created by a chef trained in Matthew Kenney’s raw food academy, Punk Rawk cheeses are handmade using organic ingredients using a process that is similar to traditional cheesemaking, except with nut milks instead of dairy milks. They use either cashew or macadamia as their nut bases and have a variety that is a blend of both types. They are deeply tangy, salty and very rich and smooth.
Sliceable? They are sliceable, and slice best when they have just been taken out of the refrigerator. As they warm to room temperature, they become softer. Perfect for scooping with a cracker or crostini!
Meltability: These cheeses do not melt.
Best uses: Perfect on a cheese plate, spread on a cracker, or sprinkled on a veggie pizza. Try the original cashew variety with a slice of tomato and a few leaves of fresh basil on sourdough bread for a mind-blowing sandwich. The nacho variety, not surprisingly, makes outstanding nachos. Try Perelandra’s favorite nacho recipe: Garden of Eatin’ blue corn chips, Upton’s Ground Chorizo Seitan, Jeff’s Naturals Pickled Jalapenos, Amy’s Refried Black Beans and thin slices of Punk Rawk’s Nacho Cheese. Put in the oven for 15 minutes at 350 to warm through. YUMMMMM!

Daiya is the most widely available of the vegan cheeses. It comes in shreds, wedges, slices and cream cheese. Its tapioca base makes for prime meltability, and it comes in a number of varieties, including cheddar, pepperjack and mozzarella shreds; provolone, Swiss and cheddar slices; jack, jalapeño-garlic harvarti and cheddar wedges. They make pizzas that use their shreds as well.
Sliceable? The wedges are definitely sliceable, and the slices are, well, slices.
Meltability: Daiya melts easily and well in an oven, broiler or in a pan.
Best uses:
Shreds: Pizza, quesadillas
Slices: Grilled cheese sandwiches
Wedges: With crackers, on a cheese plate, grilled cheese sandwiches
Cream cheese: Replace regular cream cheese with this to make an awesome cheesecake and top your bagels with it, too.

Teese Vegan Cheese

Made by Chicago Vegan Foods, makers of the famed Dandies vegan marshmallows, Teese is soy-free, gluten-free, peanut & tree-nut free. It has a pea protein, tapioca starch and coconut oil base. It comes in cheddar, mozzarella and cheddar cheese sauce.
Sliceable? It is sliceable (except for the cheddar sauce)! It comes in a tube and your slices will be perfect circles. It’s easy to slice and shred, and is really super firm if kept in the refrigerator prior to use.
Meltability? It melts very well, and becomes stretchy. You can even make a surprisingly authentic and super simple macaroni and cheese with the creamy cheddar variety if you combine it with cooked pasta.
Best uses: Anything melty! Macaroni and cheese, grilled cheese, nachos, quesadillas…
Staff Comments on Teese Mozzarella: “Very mild flavor, a little salty, I can see it being good on pizza.” “I didn’t care for the consistency.” “Very easy to slice.”

Made in the Hudson Valley, these creamy, spreadable cheeses are made from cultured cashews, probiotics and salt. Treeline is currently perfecting a hard cashew cheese as well, but it is not currently available.
Sliceable? Sliceable when it’s just been taken out of the fridge. Once it warms it won’t retain its form.
Meltability: These cheeses do not melt.
Best uses: Cheese plates, crackers, and bagels (oh my!). The ingredients of Treeline cheeses are really similar to those of Dr. Cow’s, but official Perelandra taste-testers report that their flavors are different, with Treeline winning the prize for tangiest cheese.

From Our Nutritionist: 5 New Years Resolutions You Can Actually Stick To

Everyone does it – “This year I am going to give up dessert completely!” “This year I am going to go to the gym every single day!” “This year I am going to get up early and make a green juice every day!” – but most of us find it hard to stick to resolutions that are drastic changes in our lifestyle.  So how about making a few small changes that can put you on the path to where you want to be?

Here are Allison’s top 5 suggestions for do-able New Years Resolutions

1. Drink more water!

Every system in your body relies on water to function properly. This is one of the easiest changes for most people to incorporate into their day-to-day routine. So how much do you actually need? Everyone thinks of the 8 glasses a day rule, but The Institute of Medicine determined that an adequate intake (AI) for men is roughly 3 liters (about 13 cups) of total beverages a day. The AI for women is 2.2 liters (about 9 cups) of total beverages a day.

This year, why not try focusing on water and herbal teas instead of soda or other sugary beverages?

2. Eat more plants!

Thanks to Michael Pollan for introducing this phrase into the general lexicon! Most of us can benefit from eating more plants. Plant foods, like fruits, vegetables, nuts and seeds, are high in vitamins, minerals, and fiber. They also tend to be lower in calorie while being more nutrient dense, making them a great choice to fill up on if you’re looking to cut calories. The USDA’s MyPlate actually offers excellent guidance by suggesting that you make a full 1/2 of your plate fruits and veggies at each meal!

3. Incorporate more movement into your day, every day

Your body was built to be in motion, and most of us are stuck at a desk everyday. Try taking a few minutes each hour to move a little bit- whether it is a walk to the bathroom or some stretches in your chair. Here are some fun and easy ways to incorporate more movement into your day:

4. Learn to Meditate!

A growing body of scientific evidence supports the health benefits of meditation that include reducing negative emotions and building skills to manage your stress. 5. Eat Less Sugar!

It’s important! Sugar impacts your immune system, is full of empty calories and most of us eat way too much. The average American consumes about 130 pounds of sugar EACH YEAR! Some simple ways to reduce your sugar intake:

Create a unique Cheese and Fruit platter

Tis’ the season for the cheese plate. Isn’t it always? Here’s a lovely little first course for a Thanksgiving meal. Simple and succulent nut-based vegan cheeses are an exciting new option for a Thanksgiving appetizer. They are the perfect solution for vegans and cheese-lover alike. A cheese plate and a bottle of wine make for a perfectly cozy holiday evening at home with friends. Believe us when we say that these nut-based cheeses can hold their own against any of their dairy-based counterparts! Find each of the cheeses and appetizers at our store.

Punk Rawk cheeses are handmade using organic ingredients. The process is similar to that for making dairy cheese except that it uses nut milk rather than dairy milk. The milk is first fermented. Then, moisture is removed to arrive at a semi-solid texture. Finally, cheese is flavored.  Cheese come in three flavors: plain, herb, and smoked (with a black pepper crust).  There are also three varieties of cheeses: cashew, macadamia, and a cashew/macadamia blend. Each variety has unique properties.

Treeline Cheese is totally dairy-free.
