- Since its inception in 2000, the blue hill bay® line has adopted traditional methods of curing and smoking salmon - techniques employed in europe for generations. Our distinct smoked salmon process begins with the freshest salmon available. Wild coho salmon from the pristine waters of southeastern alaska are caught by local fishermen. After a special dry curing process is completed, sides of salmon are cold smoked with a unique blend of native american hardwoods. The salmon are trimmed by hand, packed, chilled and delivered to their markets soon after leaving the smokehouse. Wild alaskan coho salmon is also noted for its bright color, firm texture, and distinctive buttery flavor. Wild coho salmon makes a delightful appetizer and is delicious in a salad, sandwich or entree.
