| Spinach Salad with Maple Mustard Dressing |

Ingredients:
- 1 pound fresh spinach, washed, stemmed, dried
- 1 cup thinly shredded red cabbage
- 1 cup sliced button mushrooms
- 1/4 cup red onion, thinly sliced
- 1/4 cup canola oil
- 1/4 cup apple juice
- 2 tablespoons Apple Cider Vinegar
- 1 tablespoon maple syrup
- 2 tablespoons Dijon-style mustard
- pinch of salt
- black pepper to taste

| Instructions: |
| Place salad ingredients in a serving bowl. In a small jar, combine all of the dressing ingredients and shake well. Pour over salad and toss. Serve immediately. |
