Ingredients:
- 1 pound boneless pork loin, trimmed
- 1/3 cup orange juice
- 1/4 cup fresh lime juice
- 1 teaspoon sugar
- 1 teaspoon dried oregano, crushed
- 3 cloves garlic, minced

| Cooking Time: Over one hour |

| Instructions: |
| Place pork loin in a plastic bag in a shallow dish. Combine orange juice, lime juice, sugar, oregano, and garlic in a small bowl; pour over pork. Seal bag. Refrigerate overnight, turning the bag occasionally. Preheat oven to 350 degrees. Drain meat, discarding marinade. Place meat on a rack in a shallow baking pan. Insert a meat thermometer so bulb is in center of pork. Sprinkle with salt and pepper and roast for 45 - 60 minutes or until thermometer registers 160 degrees. Let stand 5 minutes before slicing. |
