            | Red garnet sweet potatoes are best if you can find them. In fact, any orange vegetable works well here: butternut squash or carrots for example. |

            | Ingredients: 
                1/2 Spanish onion, chopped1 teaspoon Curry4 large sweet potatoes, peeled and cubed1 teaspoon salt, or to taste1 teaspoon olive oil1/2 teaspoon Cumin4-5 cups water or Vegetable Stock1/2 teaspoon ginger powder |

            | Instructions: |  
            | In a large soup pot, saute onion with spices until onion is soft, about 5 minutes. Place sweet potatoes or squash in soup pot with the water and salt. Boil gently until vegetables are soft. Puree in blender in batches. Garnish with chopped parsley, scallions or garlic croutons. |
