42-Year-Old Organic Food Store Opens Vegan Kitchen and Juice Bar in Brooklyn
A minimum 95 percent of ingredients used at Perelandra are organic. The business is also committed to sustainability, ensuring customers that all of its packaging is completely recyclable. Further, all unsold food is donated to a local charity, Rescuing Leftover Cuisine, that caters for the less fortunate.

The new addition will include a hot bar buffet, a sandwich counter, a kiosk for prepared meals, and a case for baked goods and pastries including treats like root vegetable muffins.

“This is the most significant expansion we’ve done in nearly 20 years,” said co-owner Allison Buckingham. “We’re close to tripling the size of the kitchen.”

Where to Eat: For a quick snack or inexpensive bite, stop in Perelandra for organic, healthy food to go (chili sin carne, seitan bahn-mi, gluten-free chocolate truffles, and the like). And don’t leave without ordering a juice or smoothie (the Green Beret, with leafy greens, blueberry, banana, mango, raw cacao nibs, hemp protein, and unsweetened almond milk, is a knockout).

"Health conscious consumers do buy [these sodas], and I would argue that they are a healthier alternative to traditional soda in that --the brands that we sell, at least-- do not contain corn syrup, artificial colors or artificial flavors, which the majority of traditional sodas do contain,” Allison Buckingham, MBA, New York State licensed dietitian-nutritionist and co-owner of Perelandra said. Still, she notes that even these healthier alternatives, despite their all-natural ingredients, still contain sugars and calories and she strongly recommends “consuming any sweetened beverage in moderation.”

Talk to your customers regularly. “It’s important to stay in touch with what your customers really want in order to keep them coming in,” Buckingham says. “Ask them what you’re doing well, what they’d like to see done differently and if there’s anything that they’d like you to carry. Always let them know that you value their opinion.”
